How are we all, on this fine Friday 13th? Any horror stories to speak of?
Today, I submitted a design assessment I’d been working on for the last month.
Feeling elated, sleep deprived and slightly delirious, I wanted to celebrate with a refreshing, zesty, fruity mocktail.
Something like a nice daiquiri, but without the bevvy.
I’m now curled up on the couch, sipping on this, and it’s lovely, so I’m sharing it with you…
Ingredients (Fills a 1 litre jug)
- 3 x handfuls of frozen black forest fruits
- 4 x strawberries
- 500ml x bitter lemon juice
- juice of 1 lime
- 2 x handfuls of ice
Blitz the ingredients together then, if you want it extra smooth, put it through a sieve. Otherwise, fill your jug/pitcher, pop in your leftover lime rinds and add some extra strawberries if you desire.
I’m sure a few shots of rum, vodka, or even prosecco would get on well with this drink, if you’re looking for something with a kick!
Remember it’s Mammy’s Day on Sunday. I’m sure she’d love a wee jug of fruity refreshment, with or without the bubbles!
Happy Friday, everyone, and have a fabulous weekend. Hope it’s filled with lots of comforting treats and tasty morsels.
Chin chin!
