Honey Soy Salmon

Having recently been sent a bottle of Beech Forest Honeydew to review, I was determined to use it in a savoury dish.  Anyone who knows me will know I’m not the best at baking, so I wanted to test it out on a dish that had some hope of making it through the other side!

 

 

 

 

The documentation which accompanied the honey suggested a Moroccan Chicken dish (which sounds lovely), but on this occasion, I decided to try it out on Salmon.  I’m not the biggest fan of salmon on its own, but I do like it marinated in a lovely, sticky sauce!

I gleamed inspiration from this highly rated recipe, but decided not to stuff it with cream cheese (it doesn’t seem like a good combination to me).

Here’s what I did:

 

 

 

 

Ingredients (Serves 4):

4 salmon fillets

150ml soy sauce

4 tbsp honey

3 tbsp dijon mustard

5 cloves garlic, sliced finely

1 tsp chilli powder

1 tsp ground ginger

I mixed all the ingredients into a dish large enough to fit the salmon, then immersed said salmon in it.  I made sure to coat both sides generously, then covered with a lid and popped in the fridge to marinate for 2 hours (I would have done it overnight if I had the time, but I’m sure half an hour would also do, if you’re pushed for time).

 

 

 

 

I placed each salmon fillet on a square of tin foil, spooning over a generous helping of the marinade before closing the foil over the top.

 

 

 

 

I baked them in a preheated oven at 220 degrees for 25 minutes, spooning more marinade over the salmon around half way through.  This can be served with rice or noodles, but I was in the mood for some buttery mash and tender veg (it really was called tender veg on the packet; I’m not being inappropriately affectionate toward vegetables).

 

 

 

 

This was a lovely meal, and a fabulous way to use honey for savoury purposes.  I plan to use my remaining honey for another batch of honey mustard chicken. 

I also intend to start putting some honey into hot water in the mornings, in place of my morning coffee, as apparently it’s “an easy way to incorporate natural goodness into your diet and help improve health and wellbeing.  Unlike other squeezy honeys, New Zealand Honey Co’s range has a unique pre-biotic and antioxidant rating which tells you just how much goodness you’re getting from each spoonful.” 

Honeys have quite a few ratings but this particular rating is a pre-biotic rating. A pre-biotic rating talks to the level of ‘pre-biotic sugars’ in the honey. Like other ratings the higher the number the bigger the potential benefit. According to New Zealand Honey Co’s Technical Director –  David McMillan, many other honeys are significantly below this pre-biotic rating at only between 1 and 5.

      I do like savoury honey dishes! Think I’ll do the honey mustard chicken one again soon… with some green beans… and some buttery mash… mmm… what was I saying again? 🙂

      Thank you 🙂 I always love the look of salmon; so meaty looking. But it just tastes like sea-water on its own…. yeauch! This is a good marinade 🙂
