I wasn’t sure whether to write a post on this sandwich or not, as it was just something quick I threw together and it was super easy to make.
But then I realised that’s exactly why I should be writing about it!
It was gloriously sunny when I left work today…
Perfect weather for a light, tasty dinner.
Ingredients (Serves 2)
- 1 x small loaf of bread/baguette (mines was an olive flute in a supermarket bargain bin for 55p!)
- 1 x beef tomato
- 1 x mozzarella ball
- 1 x tbsp dried oregano
- 1 x handful rocket leaves
- Drizzle of balsamic glaze (optional)
Normally I’d use the grill but mines doesn’t work at the mo, so I bunged the oven up full.
Cutting the beef tomato into thick, horizontal slices, I seasoned generously with salt, pepper and dried oregano. I roasted them in the oven for 5-7 mins.
Next, I sliced the mozzarella into chunks of a similar thickness to the tomatoes, making sure to season well also.
I placed the mozzarella on top of the tomatoes and roasted for another 5 mins. I warmed the bread in the oven at this point too.
Assembly: Rocket leaves went on the bottom, then I layered the tomatoes & mozzarella and drizzled with balsamic glaze.
I served it up with a side of sea salt & balsamic vinegar crisps. Very tasty indeed!
I demolished half tonight and have kept the other half for lunch tomorrow. I hope think it’ll taste even better the next day!
